Baked eggs with feta and chives

Ingredients

  • Vegetable oil
  • 8 eggs
  • ½ cup thickened cream
  • 40g feta cheese or goats cheese
  • 2 shallots (thinly sliced)
  • ¼ cup chives (finely chopped)
  • Salt and pepper

Method

  1. Preheat oven to 200°C and grease 8 small (1/2 cup) ovenproof dishes with vegetable oil
  2. Crack an egg into every dish
  3. Pour cream equally on top of all dishes
  4. Sprinkle with feta, shallots and chives
  5. Season with salt and pepper if desired
  6. Place dishes on baking tray in oven and bake for 10 minutes
  7. Serve with toast (not too crusty) if desired or simply eat with a spoon
