Prawn laksa soup

Ingredients

  • 1/3 cup Laksa Paste (check the international food isle)
  • 400ml can coconut milk
  • 1 cup water
  • 24 green prawns, peeled, tails intact
  • 200g dried rice stick noodles
  • 120g green beans, thickly sliced diagonally
  • 80g bean sprouts, trimmed
  • Fresh Thai basil to serve
  • Lime wedges to serve

Method

  1. Heat a medium saucepan on medium heat
  2. Add Laksa paste and cook for 30 seconds
  3. Stir in coconut milk and water and simmer for 3 minutes
  4. Add prawns and cook for another 3 minutes
  5. Meanwhile, cook noodles (with packet directions) and drain
  6. Add noodles into serving bowls and pour over mixture
  7. Top with beans, sprouts, basil and squeeze over lime
